Cajun Potato
Ingredients:
20 - 25 small/baby potatoes
salt to taste
Potatoes to be dipped in batter:
1/4 cup corn flour
2 tbsp maida
1 tbsp rice flour
water as needed
Cajun Sauce:
1 cup white mayonnaise or burger Mayonnaise
1 tsp chilli flakes
1 tsp garlic powder
1 tsp oregano
1 tsp onion powder
1/2 tsp pepper
1/4 tsp red chilli powder
1/2 cup milk
salt to taste
For garnishing:
Onion finely chopped
Red chilli flakes for garnish
Red chilli powder
Coriander leaves
Instructions:
Take 20-25 small/baby potatoes rinse in water until the water is completely clear. As we are adding potatoes with skin make sure they are completely clean.
Pressure cook potatoes with skin for 2 whistles(in high flame). Once the cooker is normal take out potatoes and check it should be soft when pricked.
Place all the potatoes on a chopping board, use a flat base ladle and press it. Do not apply more pressure on them.
Finish for all potatoes, and keep them aside. In a mixing bowl add corn flour, Maida, rice flour and mix well. Add water little by little and keep mixing. Note that there should not be any lumps. Make slightly running batter.
Now coat each potato with the batter(a thin coating would be enough).Shallow fry until golden and crisp. Fry them only while serving in batches.
Complete all the batches and keep aside.
Now to another mixing bowl add all the ingredients listed under 'Cajun Sauce' and mix them all. Then add milk to form a creamy flowing sauce.
Now on the serving plate place the crisp potatoes pour Cajun sauce over it.
Garnish with raw onion, mixed herbs, chilli flakes, red chilli powder and finally garnish with coriander leaves and serve immediately.
