Hummus (Chickpeas) Easy and Quick Recipe
Ingredients:
4 ½ cups of cooked dried chickpeas
½ cup sesame seeds
juice of 1 lemon
1/3 cup garlic
3-4 Tbsp Olive oil
Salt
Method:
Soak some dried chickpeas in cold water and let them sit overnight. Drain the chickpeas and transfer to a cooker and add in cold water until it is covering it by about 2 inches. Also add in 1 teaspoon of salt. Bring them to a boil over high heat and then simmer for 30-40 minutes over low heat or until tender. Drain the cooked chickpeas and transfer to a pot or bowl. And cool it.
Heat Olive Oil. Add the Garlic and some sesame seed, sauté for about 2-3 mints until light golden brown. Turn Off the flame.
Remove garlic from the oil.
In a grinder, add the chickpeas, garlic(removed from oil this makes hummus extremely delicious), sesame seeds, lemon juice and salt grind on high speed until it forms a thick paste.
Remove the paste from the grinder. And some garlic olive oil in the paste and stir. Keep some oil aside.
Serve with on a plate with a drizzle of garlic sesame olive oil, cayenne and optional chopped parsley.
