How to make Malai Paneer
Ingredients:
Full fat cow milk - 2lit
Lemon Juice - 2tbsp
Water to wash - 1/2 lit
Method:
Take kadhai. Pour the milk and bring it boil using high flame. Slow down the flame.
Add Lemon and stir for 1min. You will see the milk begins to curdle. Turn off the flame.
Once the paneer is done correctly, the whey becomes clear(the may become slight yellow or green) not milky.
Take a container. Layer it with Muslin Cloth(Cotton handkerchief works well too). Transfer the curdled milk. Stain.
Wash the paneer with water to get rid of lemon taste and smell.
Squeeze off excess water. Make a knot. Take an object that can hold upto 2 to 3kg. Fill water completely onto the object.
Place the paneer on a flat surfaced container. Put the heavy object of top of it to get a tight and good round shape of paneer.
Keep aside for about 2-3 hrs. Malai paneer is ready to use.
Note* : If you use toned milk to make paneer. Paneer will be little hard but low fat.
